Looking for a quick lunch? This wrap is simple, fast and will put a huge smile on your face. I love the combination of the warm smoked duck with the sweet cherries with a little crunch of hazelnut to top it off. You can find all natural smoked duck at stores like Whole Foods. Duck is a nice change from other poultry, and has a rich meaty taste that I find more satiating than chicken. Other fruits like apricots and plums also pair very well with duck meat.
Makes three wraps (about one lunch serving)
½ smoked duck breast (about 4-6oz)
10 hazelnuts, toasted and chopped
2 tsp cherry preserves (no sugar added)
3 romaine or boston lettuce leaves
Freshly ground pepper
Slice the duck breast to about ¼ inch slices and warm it, either in your office microwave (only about 15 seconds) or toaster oven for about one minute. For each wrap, place a layer of the warm sliced duck on the lettuce first, then add about ¾ tsp of the cherry preserves and top with 1/3 of the chopped hazelnuts. Add a few twists of freshly ground pepper.
