Country-Style Spiced Sausage Patties

Many brands of breakfast sausages contain chemicals and additives, but you can easily make your own sausages. If you don’t have a meat grinder or sausage casings, sausage patties made with ground pork are a great alternative. Feel free to adjust the spices according to your own preferences. You can make these sweet by adding grated or dried apples and sage instead of the thyme and fennel.

Makes approximately 20 three-inch patties


2lbs ground pork

2 teaspoons sea salt

2 teaspoons coarsely ground black pepper

2 teaspoons each: dried sage, thyme, oregano, savory

1 tablespoon freshly ground fennel

1 tablespoon freshly grated ginger

1/8 teaspoon each freshly ground cloves and nutmeg

1/8 teaspoon cayenne pepper

2 tablespoons coconut oil

Heat coconut oil over medium heat in a large cast iron skillet. Place all ingredients in a bowl and mix well with your hands until fully incorporated. Form into small patties about 1/2 inch thick and 3″ in diameter.   Place in the pan and fry in batches. Flip after about 7 – 10 minutes and fry for another five minutes on the other side. Serve. Any leftovers can be stored in the fridge and reheated in a toaster oven at 350 degrees for approx 5 – 10 minutes for a quick weekday breakfast.
